Cassia Oil

The leaves of this large tree (Cinnamum Cassia) are in China. When distilled, they produce Cassia essential oil which is very rich in Cinnamic Aldehyde.

The crude oil is a dark brown color, warm spicy woody  balsamic. The redistilled version is a more premium rectified grade, lighter in color, less resinous.

Cassia oil is used wildly in both flavor and fragrance formulations.
